Traditionally, Mexican food didn’t use any meat and it wasn’t until the Europeans started to influence it that this type of protein was added to the diet. Luckily for meat lovers today, a number of Mexican dishes like tacos, nachos, burritos and fajitas can be stuffed with spiced meat (usually beef but sometimes chicken and other meats), along with vegetables, salsa and guacamole.
But there’s also a big emphasis on pulses. Most Mexican dishes contain some form of beans, whether mashed or intact. The most popular side is probably refried beans (frijoles refritos), and a common main dish featuring beans are enchiladas. These are corn tortillas generally filled with beans and finished with sour cream, shredded cheese and lettuce.
If you want to steer away from the norm, then you could order pozole, a delicious stew made from corn and meat, or frijoles charros (a spicy pork and bean stew). Grab some tamales on the side, these Mexican dumplings come wrapped in corn husks and smother everything in mole. This sauce is a true taste of Mexico and contains up to 30 ingredients. Just don’t forget the tequila to wash it all down!
