Palestinian Za'atar
A traditional spice blend from Palestine including dried thyme (za’atar) from the hills of Jenin in the north of the West Bank mixed with ground sesame seeds plus a touch of sumac, salt and vegetable oil.
Sumac
The dried and ground berries from the sumac tree have a citrusy, lemony flavour and dark red colour. A favourite spice of ours. Use for a sharp, acidic kick to vegetables, chicken or seafood.
Seeds for salad
Roasted mixed seeds and flaked almonds with a moderate heat. Sprinkle over salads, roasted vegetables or dips.
Lemon salt 60g
Flakes of Maldon sea salt mixed with lemon zest. Elevate your salads, soups and stews with a sprinkle or serve with simply grilled fish.

One of Yotam’s favourite spices, cardamom gives an aromatic and distinctive sweetness to cakes, desserts and sweets as well as to many savoury dishes.
Mahleb 45g
Made of the ground stone of the St Lucie cherry, Mahleb has a bitter almondy flavour.
Mymoune pomegranate molasses
Made using fresh pomegranate juice, reduced to a thick, dark syrup. It is sweet but also very sharp. It can be compared to balsamic vinegar, yet is much fruitier and should be used sparingly. Pomegranate molasses adds depth and richness to meat, fish, vegetables and vegetarian stews.
Belazu rose harissa 170g
A key ingredient in North African cooking, Rose Harissa is made from chilli peppers and a mix of over 40 herbs and spices. The addition of rose petals give a special sweetness and softens the chilli kick.
Belazu preserved lemon 350g
Finely chop and add to your cooking for bursts of North African flavour. It’s a really versatile ingredient, as great in a fennel and mackerel salad as it is with some harissa-marinated beef. A fast track to some punchy sauces and mayonnaises as well.
Gochujang paste
This scarlet-red Korean chilli paste is made from hot red peppers, fermented soy beans and glutinous rice flour. It has a distinct taste – sweet and almost Marmite-like savoury at once.

Tamarind pulp is a key ingredient in Asian cooking. The seedless pulp is used in soups, sauces and salsas to give a sharp acidic flavour.
Mymoune orange blossom water
Made from only orange blossom flowers in traditional stills, this naturally pure variety is more concentrated than other commercial brands (so you’ll need to use less) without the taste of perfume they can often have.
Mymoune rose water
Distilled drop by drop in traditional stills, without any of the additives or essences added to many other commercial brands, this is the very essence of the joury rose petals from which it is made.
Organic white miso paste
Miso is the embodiment of umami - it's sweet, salty and meaty all at once, and can single-handedly give an incredible depth of flavour to anything you add it to.
Zaytoun maftoul
Maftoul, meaning hand-rolled, is a traditional Palestinian grain made from bulgur and whole wheat flour. Women prepare it today just as their grandmothers have always done, working together to crack, hand-roll and dry the organic wheat in the Palestinian sun.
Zaytoun freekeh
Freekeh is made from processed durum wheat, where the scorch and chaff have been removed by burning the wheat head, and it is rubbed to remove the husk and reveal an aromatic grain. Freekeh can be used like rice or bulgar, in soups, as stuffing in vegetables or as pilafs.

These are more than a stand-alone snack or a happy addition to all cheeseboards. They are a mighty ingredient to lavish leaf and nut salads, rice and couscous dishes, tagines or roasted delights.
