Oh lorddddddd … please don’t let me be missss…. Under stoooood! Okay im done!!

  • Vegan Safehouse (Cajun Oyster Mushrooms & Salad)

    Initially, we had nothing for the vegan gang, vegetarians however we’ve always had covered. But you see, while we were on the roof, one of the vegans( that’s acting all funny now but I digress) became my foodie muse. I would use this persons palate to get to the vegan safe house. And we got to these delightful cajun oyster mushrooms. Slightly steamed and lightly fried. I’ve fallen in love with them myself. Such a nice texture and soaks up our cajun seasoning quite nicely. We serve that on a bed of lightly cajun seasoned salad with a lemon oil glaze and some good ol fries. If you’re vegetarian you can add some cornbread for the low. I gottchu. Oh and this one goes best with the Scotch pineapple ginger sauce . I’ll bring back the red beans soon. Have fun with it …

    I used to cook this on the roof- Sundays only. 6 hours! Madness. But I wasn’t smoking it first. Here, I’ve got the Bradley, So I’m smoking first now! And my choice of smoke is Devine. I’m not even going to tell you this one and usually I don’t care. It’s not about the recipe, but the care. You feel me? So you can have my Recipies. If you see me ask me! But I bet you won’t go through the process; it’s longggg, trust me guys. I digress..So check this, after the bad boys sit in the majik rub tub for 10+ hours, we smoke em in the Bradly for 3/4 hours- low heat. High smoke point…sweet…rich…juicy… tender… moist fi bluuuuuu…lemme stop. Then it goes to the slow cook in that Nola red sauce we do, if you know, you know. 2/3 hours.     Listen man, I’ve been frying chicken for public consumption, since 2005. Salisbury Maryland to be exact. Oh oh oh, you figured I’m not from New Orleans? No, I’m not that special. Find me one native out in london, with a shop, and I’ll serve up free fried chicken one day a week for the next 6 months. I’ll wait… untill then, you’ve got me! Don’t worry, I got this. The brine, is clean. Jasmine tea, some garlic, some lemons. And time…ofcourse… time! The marinade, lord have mercy. The smell… to live for! It’s intense, but balanced. Indulgent, but initially subtle. The crunch, well… you be the judge. If you like cheese, pair this with the Mac and Gold! That’s my word… Now, the sauce/gravy… well… playing it safe? Okay.. Cajun gravy is good. My pick, scotch Ginger… but recently, the sweet tea Glaze has me in a headlock.

HOW ARE YOU GETTING THE SMOKEY FLAVOR! Aye relax! Calm yourself and remember where we are. This is london. Not such a big pork community and operate on a halal basis so you know how that goes padner. Don’t question me anymore okay. :) formTime to time I may open the option to add beef sausage but man that stuffs expensive and everyone’s watching their pockets so hey ho! So yeah, I’m making the roux with oil that’s been flavored with smoked mixed seafood. Sautéed shrimp, along with diced bits of baby squid clams and muscles, all with a seafood stock based Rich Creole Stew. Of course, The soCalled “Holy trinity” of Celery, bell peppers and onions), is included and served with White Basmati Rice & Sweet Cornbread….     So check this, we’ve been playing around with the smoke/fry method for 15 months now… we’ve tried various flavors of bisques and we’ve got the one! 95 percent smoked, 5 percent flas fried - so you get the crisp, and that that Smokey filling. For me, I’ll eat them plain all day long. But the house loves the sweet tea glaze. As for the people? … well y'all just can’t decide aye. So try em all!
