We teamed up with our good friends from Eastleigh's wonderful Steamtown Brew co to indulge in our mutual love of New Zealand hops. Not content with that, however, we combined them with some of our British favourites. UK Cascade and Godiva were used hot side before dry hopping with fresh 25 crop NZ Cascade and Nelson Sauvin with a splash of Nelson FLOE liquid hops to finish! Way back in his university days, Head of Sales Arron made a little bit of extra cash on the side by spinning turntables at parties. After mentioning it in passing in the brewhouse, it piqued our interest and we asked if there was any evidence remaining of his record spinning abilities. A file was presented within our brewery WhatsApp group labelled “An Original Mix!” and lo, a beer name was once again born at Polly’s. Our original mix is a seamless beat-matching of Galaxy, Mosaic, Chinook and Citra for an all out hop assault on the senses. Dominant impressions of latte coffee with powerful chocolate aromas in the nose. The alcohol esters are enveloped with hints of autumn wood, citrus zest (orange, lemon) and freshly baked biscuits. The initial taste is sweetly sinful. Beer and chocolate trapped into one single glass, a liquid milky draught with a backbone of bitter malt. Noted for its copper color and as the first beer brewed by the monks of Chimay in 1862.Topped with a creamy head, it gives off a light, fruity apricot aroma produced by the fermentation. Herkenrode Vesper is one of only 23 official Belgian abbey beers and the winner of the Silver Medal at the 2018 Australian International Beer Awards. Vesper was created by Cistercian nuns at the Herkenrode monastery, which was founded in 1182. It’s a true and tough Belgian triple, With a 9% abv, a nice bitterness and a lightly cognac aftertaste. The beer is brewed using only 100% Saaz-Saaz hops, malted barley, water, yeast and herbs grown at the Herkenrode Abbey itself.£7.50Huyghe - Delerium Tremens 8.5% (330ml)
The allusion to pink elephants and the choice of names is not due to chance. With a particular character, the unique taste results from triple fermentation and the use of three different yeast strains.
