It is then delicately smoked in a natural way. Its shape is evenly square and when cut, slices are thick because of the presence of the rump. Maturation lasts at least 4-5 months. Schiacciata Piccante is a cured meat originally from Calabria. In the piece stand out sharper lean from fat parts worked with knife cut. The color tends to brick red and the shape is typically crushed. Hints of sweet pepper and paprika propose net, integrated with the scent of small craft shops of delicatessen and balsamic notes.
