Gyoza, otherwise known as dumplings, are very popular in Japan. We have taken ingredients from Peru and Japan to add a sweet potato puree, red pepper ponzu, pork and prawn. What is also special about this dish is how it is cooked. First seared in a pan and then steamed by adding cold water to the hot pan and quickly covering.
