    This non-vintage wine is drawn from a big old concrete vat which contains a blend of Pignoletto, Alionza, Albana and Malvasia from different vineyards of various ages, from every vintage back to 2010. The wines are made in different ways, in a variety of vessels. The majority of the blend is made up of wine from the most recent vintage and the vat is constantly being topped up with young wine to prevent oxidation. This is a great trattoria wine that while easy to drink, is anything but simple. While the younger wines are all fruit and flowers, there’s a salty, nutty backbone to this which makes for a wine of real intrigue.

    István’s affection for Chenin stems deep from the love for the wines of the Loire Valley. Which, I guess justifies, that he couldn’t imagine his vineyard without planting some. Even more so, when he makes such a brilliant wine from it. Multilayered citrus, white peach paired with almonds and lanolin. Creamy, round with a chalky minerality and electric acidity on the finish. A must try for the Chenin lovers.

  • Marko Fon, Malvazija, 2022, Kras, Slovenia

    From a remote plot of fifty year old vines, it spends two days on skins and a year in a combination of old cask and stainless-steel tank. This is a benchmark for the varietal, combining the grape’s gorgeous aromatics and cleansing acidity with impeccable balance. The finish is salty and whistle clean, a hallmark of the limestone soils of the Kras.

    Sauvignon Blanc from two parcels: fifty five year old vines planted over schist, and thirty year old vines over clay. The grapes were fermented as whole bunches for a week, before being pressed to vats until the following spring. From a cooler year, this offers soaring aromas of elderflower, tempered by fine tannins, pith and zest. A highly original expression of the grape.

    Chenin Blanc from vines around forty years old, pressed directly to barrel for a year of elévage. Reflecting the vintage this is electric, humming with an intense, stony minerality and a long, lingering line of acid. After a nice rest in our cellar, it is just beginning to show its pedigree, suggesting a long life ahead.

  • Parajes Del Valle, Monastrell, 2023, Jumilla, Spain

    Bright, piercing cherry red, crisp and glistening. The nose is also bright, intense, concentrated with redcurrants, cherry, raspberry and some green pepper spice. The fruit is fresh, juicy but with piercing clean acidity and young grippy tannins. Concentrated and elegant redcurrant fruit persists to finish on spice, fresh tobacco and lots of morish acidity.

    Anjou Gamay which is very precise in its fruit-forward, juicy nature. Raspberry, blueberry, strawberry, very persistent, with a white pepper and light spicy notes on finish. Low tannins and one that works on its own as well as lighter dishes.

    Carignan from vines between sixty and one hundred years old, planted over fine, silty soils down by the river. The grapes were destemmed and spent forty days on skins in vats, before the free run juice was transferred to glass demijohns for fourteen months of élevage. Luminous in the glass, reflecting the vintage this displays a pleasant freshness and is gently perfumed with red berries and bitter herbs. An uplifting wine that is full of sunshine.

    Gamay from three hectares of hundred-year-old vines planted five hundred metres above sea level around Romuald’s home in Beaujeu. The vines are left to grow wild and are neither pruned nor ploughed. The result is a dark-fruited, pure and lively take on the grape with a unique energy that keeps us coming back for more.

    Aglianico from a remote vineyard around eighty years old, planted almost five hundred metres above sea level. It sees twelve days on skins and two years resting in concrete vats, rendering a deep, dark and savoury wine that provides a great introduction to the house style of Irpinia’s emblematic grape.

  • Claire and Florent Bejon, 'Pain Perdu', Cabernet Franc, 2022, Loire, France

    From a small parcel of Cabernet Franc in the village of Beaumont-en-Véron on the right bank of the Vienne. The vines here are forty years old and planted on a slope over limestone and sand. The grapes were fermented as whole bunches in cuve for three weeks, before being pressed to a combination of vats, old barrels and amphorae for a short élevage. Wonderfully plush, open and expressive, it pairs red fruits, earth and spice to beautiful effect.

  • Olivier Boulin, 'Le Vol Tige du Cat', Carignan & Grenache, 2021, Jura, France

    A blend of old vines grapes from a parcel farmed by Sébastien Chatillon planted over limestone near Uzes in the Gard. The grapes were macerated on the skins for three weeks, before being pressed slowly to old barrels for a year of elévage. Southern in accent, the cooler vintage has produced an elegant wine with delicate notes of red berries, earth and herbs.

  • Robinot, 'Le Regard', Pineau d’Aunis, 2023, Loire, France

    Pineau d’Aunis from thirty year old vines. The grapes were fermented as whole bunches for three weeks and spent fifteen months ageing in old barrels. As always, this is made from the first of the variety the family harvested, and as such, it is the most immediate of their reds. From a cool, classic vintage, it pours a gleaming ruby and is taut, neat, and fragrant with wild strawberry and cracked pepper.
