Alsop & Walker are based in East Sussex and their milk is sourced from a local dairy farmer.Mayfield is unique, the first whole cheese in the UK with natural eyes. Juliana Sedli started The Old Cheese Room in 2004, moving into a converted old cattle byre in the heart of Neston Farm. Neston Farm prides itself on its rich organic milk from its herd of Jersey cows.Bybrook is an Alpine-style hard cheese with a bouncy texture and small eyes (holes). Bybrook is matured on beech wooden boards originally used to mature cheddar on in the 1960s for 3-5 months. Juliana Sedli has makes this wonderful little cheese, based on a reblochon recipe, and it is a rich buttery cheese. The rind is washed regularly until it develops its distinctive colouring, maturing in four weeks.
