Chicken Cacciatore
This is an Italian dish which in truth can vary from region to region. It is large pieces of chicken marinated in red wine, then sealed in a hot pan and cooked slowly with olives, mushrooms, carrots, herbs and spices etc. It varies because the Italians tend to use whatever vegetables they have around at the time, but one thing for sure it is full of flavour, succulent and delicious.
