William H Bonney, A.K.A. “Billy the Kid” was a criminal to some, and a legend to others. His short and crazy life led to the Mexicans labelling him as “El Chivato” meaning “The Rascal”. Those tales in the hot Tex-Mex states, helped to inspire our food that we know both Billy and his contemporaries would have devoured and loved.
