Our six-stage Jamaican Jerk Chicken starts with a secret spice mix and marinade. It’s then flame-grilled the traditional way over coal, basted twice, flung in the oven to cook through, to be returned to the grill to crisp up with one more layer of jerk basting sauce. Stewed Chicken With Dumpling
House-seasoned chicken breast is sealed off in the pot, fried in garlic, chilli and ginger to then stew with tomatoes, potatoes, peppers, carrots and dumplings. The usual suspects of bay and thyme are in the mix, making this dish fragrant. The fat-free dumplings keep this light for such a hearty stew.
