Mullet Roe is an Italian delicacy of salted, cured fish roe, typically of the grey mullet. It is made from the roe pouch of grey mullet, massaged by hand to eliminate air pocket, then dried and cured in sea salt for few weeks. The result is a hard, dry slab preserved inside its natural casing of the roe, which contains the eggs securely once dried and salted.£32.50Robiola alla Birra (200g)

Also known as Drunken Goat, Murcia al Vino is the famous wine washed goat's milk cheese from Spain. As if having a glass of wine with your cheese was not enough, the producers of this unique cheese decided to bathe it in wine. During its maturation the cheese is washed with local Jumilla and Yecla red wines to give it its distinctive winey taste and aroma. It is crisp with full on green apple zingyness whilst balanced wonderfully by a touch of oak.
