All tandoori dishes are cooked over charcoal in individual portions in a traditional oven made of special clay. Only natural ingredients are used & little or no oil is necessary.

With all curry dishes you can eat rice, nan, paratha or roti. All of them can be made very mild, medium, madras or vindaloo. A South Indian version of dishes produced from a wide range of oriental spices giving a rich flavour.

Here the characteristics of a dish are derived from the use of tomatoes, pimientos & onions fried in spiced ghee to produce a dish of medium strength.
A briskly fried preparation of fresh onions, black peppers, dhania, cinnamon, bay leaves & cardamoms. Pratha is recommended as an alternative to rice with the dish.
As with the Persian origins of Kurma, Dhansak tends to mildness, deriving piquant richness from its blend of spiced ghee with garlic & lentil, which belies the apparent confusion of its ingredients.
Related to the madras, but involving a greater use of tomato, ginger, chilli & black pepper. Very hot.
