Flavoured with saffron and aromatic spices, our delicious biriyani is baked with basmati rice, seasoned with spices between layers of either meat or vegetable and served with a vegetable sauce.
An originally Persian dish now common in Bombay. The chicken, prawn, lamb are cooked with lentils to a lightly sweet and sour taste. Served with pilau rice.
The preparation of food was a very complex matter in the Royal Kitchens of Jaipur and was raised to the levels of an art form. Thus the ‘Khansama’ (the royal cooks) worked in the stately palaces and kept their most enigmatic recipes to themselves.
These highly flavoured dishes using aromatic roasted spices originated in Northern India and Afghanistan.
